Ok, so I recently acquired LOTS of farmer's market surplus. For a whopping eight dollars I got 1/2 bushel of cucumbers (which I'm going to try to make pickles out of) and 1/2 bushel fo mixed squash - zucchini and yellow crooknecks.

Any ideas? We're not huge squash eaters, but are trying to use what's cheap and nutritious, as the food budget is limited.

Well, you can grate some and freeze as is in ziploc bags. Great for making zucchini bread, muffins, etc.
Here is my squash cookbook, maybe something will appeal. I LOVE zucchini. Unfortunately, I am the only one in my family who does! icon_rolleyes.gif

Here are a couple recipes for you to try.

I don't know if this freezes after cooking but Yellow Squash With Onions and Parmesan can be made with frozen squash (Slice and blanch first. Then squeeze out excess water before cooking).

This can't be made with frozen squash, but may freeze successfully for reheating. Tricolor Summer Squash on the Grill

This uses either fresh or frozen squash, Italian Sausage Pot. People who aren't especially fond of squash will often enjoy it when included in this kind of mixed dish. Same for Un-Spaghetti -- spaghetti sauce is a great way to make less favored veggies more palatable. Both of these should freeze but take precautions against overcooking.

May I recommend Zucchini Coconut Bread. It freezes wonderfully, too!

I found quite a few recipes for lasagna that use zucchini instead of lasagna noodles-haven't tried any yet but I can't wait too icon_smile.gif

I often freeze grated zucchini and yellow squash ( I saute lightly first to remove some of the excess moisture). When thawed, I use in recipes like these

Zucchini Pancakes
Hide the Zucchini
Zucchini Pancakes
Zucchini Slice

or saute with onions and toss with skinny pasta, like linguine

or add a handful to your favorite pasta sauce (great way to boost your vege intake)

I just came across this one and thought it would be a very different way to use your squash. I've never tried it, I just thought it sounded good.

First of all, GREAT JOB ON THAT ONE! What a deal!

Next, I love zucchini lasangna...have you ever tried it? It's very good. You can make it with oor without noodles. It's certainly healthy!icon_smile.gif

Grilled Veggies, I just cut zucchini, peppers, onions, mushrooms, tossed with a little olive oil, and McCormick Roasted Garlic and Peppers Seasoning, toss into a grill wok and cook beside meat, for us we like chicken. I usually make extras to freeze and hubby mixes them with chicken for a cooked inside dish that tastes grilled.
