Barb's Not so Traditional Egg Salad

I am not crazy about eggs; I like them, but I have to mask them a bit. When I scramble eggs, I always add cheese. I was looking in my fridge one day; badly needing to go food shopping...trying to come up with something for lunch. I had eggs and I had mayonaise. I always have fresh herbs and spices, so I thought I could probably pull off an egg salad that was kicked up from the normal "yolky" tasting traditional egg salad. It worked well! I just made my egg salad last night; my son called me a work this afternoon to rave about how much he loves it!

SERVES 5 (change servings and units)

    **Mix all ingredients together and serve on your favorite bread, roll, toast, cracker, etc.

    ***I like it with a slice of Sharp Provolone Cheese.

I scaled the recipe back for 3 eggs and enjoyed it! I didn't have salad dressing so added a pinch of vinegar and sugar to regular mayo. Thanks for a tasty egg salad! Made for the Easter Egg Hunt game in TOTM.

    I liked this very much! I had to use dried parsley and basil but followed the rest of the recipe exactly. I served it over a quartered tomato with some crackers and had a very nice lunch. Thanks so much for posting!
