Banana Double Chocolate Cupcakes

While craving Banana Chocolate Cupcakes one day, I came across a great recipe on Bake and Destroy (http://nataliecakes.wordpress.com/2007/02/22/banana-chocolate-chip-cupcakes/) that I've upped the chocolate content in to satisfy my craving. Hope it satisfies yours, too!

SERVES 12 , 12 -16 cupcakes (change servings and units)

    Preheat oven to 350, line a muffin pan with cupcake liners.

    In a small bowl, mix together flour, baking soda, salt, and cocoa. Set aside.

    In a larger bowl, whisk together sugar, oil, and eggs until smooth.

    Add mashed banana and vanilla, beat well.
  5. 5
    Add flour mixture, beat until smooth.
  6. 6
    Stir in chocolate chips.

    Scoop batter into cupcake liners. Bake 24-28 minutes, or until tops spring back when lightly touched.

    Cool in pan for 10 minutes, then let cool completely on a wire rack. Frost with favourite frosting (although they're fine plain, too!), eat!
