Banana Cake With Banana-Butter Frosting

Ingredients

Cake

• 2 eggs
• 1 1/4 cups granulated sugar
• 1/2 cup shortening (I like Crisco)
• 2 very ripe bananas
• 1 cup buttermilk (or use 1 cup milk with 1 t baking soda mixed in and let set for 15 minutes before adding to recipe)
• 2 cups all-purpose flour
• 1 teaspoon baking powder

Banana-Butter Frosting

• 1/2 cup mashed ripe banana
• 1 teaspoon lemon juice
• 1/4 cup butter
• 3 1/2 cups sifted confectioners' sugar

Directions

   Grease and flour a 9 1/2-inch by 11-inch cake pan.

   Preheat oven to 325 degrees F.

   In large bowl, beat the eggs, sugar, shortening.

   In separate bowl, mash to really ripe bananas and then add to the egg, sugar and shortening mixture.

   Combine the flour with the baking powder.

   Alternately add the buttermilk and flour in with the egg, sugar and shortening mixture; beat until well-blended.

   Pour batter into greased and floured cake pan.

   Bake for 30-35 minutes or until tested done with a toothpick in the center.

   To prepare the frosting: Mix together the banana and lemon juice.

    Beat butter until creamy.

    Add sugar and banana alternately, a small amount at a time, to the butter.

    Beat until frosting is light and fluffy.

    Spread over cooled banana cake.
