An unusual combination, to be sure, but one that looks so good I just had to share! I've recently discovered the wonders of avocados, and have been trying to find new ways to enjoy their heart-healthy benefits. Though I haven't yet tried these muffins (from the Kiwi Gardens B&B in Kailua-Kona, Hawaii), I will certainly do so the next time I have some extra avocados on hand. You can save some time by using thawed frozen mango chunks instead of fresh mango.

SERVES 12 , 12 muffins (change servings and units)

    Preheat oven to 350 degrees. Spray medium-size muffin tins with non-stick cooking spray.

    Mash fruit and add together. Set aside.
  3. 3
    Sift flour, baking soda, and baking powder in bowl. In a separate bowl, cream butter, sugar, and beaten eggs well, then add fruit and vanilla; mix. Add flour mixture; mix well.

    Scoop batter into muffin tin, and bake at 350 degrees for approximately 35 minutes.

Amazing muffins. A friend gave me 5lbs of bananas & 2 large avocados--this recipe was a good fit & doubled nicely. I didn't let my bananas get ripe enough so the predominant flavor in mine is mango but that works well here in our tropical climate. My husband absolutely will not stay out of these--he said he loves the flavor & that they are not overly sweet; great with a cup of coffee/tea.

    LOVED these muffins! I didn't have mango so I used kiwi's instead, plus cut sugar to 1/2 cup and used 1 Cup whole wheat flour and 2 all purpose. I added macadamia nuts. They turned out fabulous and very tastey!!! I also baked them in regular sized muffin pans and got 24 muffins out of it! My 3 year old loved them and she didn't even know it had "hidden goodness" Will definitely make them again!
