Avery's Favorite Pasta Salad

This is an easy to prepare, ranch-based pasta salad that all my friends and family love. I've given the name to my son, whom I'm always creating new recipes for. As I stated in the recipe, You can interchange the additional ingredients of this recipe to your liking, so it's a very versatile recipe with a flavor that most people really enjoy. I hope you love it as much as we do =)

SERVES 15 -20 (change servings and units)

Ingredients

  • 1 (12 ounce) box tri color rotini noodles

  • 1 dry ranch dressing mix, pack
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1/2 cup red onion, diced
  • 1 large cucumber, peeled, seeded and diced
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon celery salt
  • 1/2 teaspoon black pepper
  • 1 cup chopped ham (optional)
  • 1/2 cup frozen peas (optional)

Directions

    Boil the noodles according to packaging instructions (or until al dente.).

    Drain and rinse with cold water. Set aside.
  3. 3
    In a large bowl mix the dry ranch packet, mayo, sour cream and parsley.

    Gently fold in the onion, cucumber, ham, peas and noodles until coated.

    Season with celery salt and black pepper to taste.

    You can interchange the optional ingredients to your liking. I have used this recipe with chopped chicken or even a firm fish like tuna or salmon. You can also keep it vegetarian by adding an array of your favorite veggies. I think it's great with some cold blanched asparagus! I hope you enjoy this recipe!
