Asparagus With Creamy, Cheesy, Aioli Sauce

This wonderful rich and creamy sauce can be varied by the type of vinegar you use. Although I posted Balsamic, a Champagne Vinegar makes it light and crispy. This is a great sauce for fish and other vegetables as well.

SERVES 4 (change servings and units)

Ingredients

  • 1 (6 1/2 ounce) package garlic & herbs spreadable cheese, I use Alouette

  • 6 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon shallot, minced
  • 1 lb asparagus, rinsed

Directions

    FOR SAUCE:.

    Place Garlic & Herbs Spreadable Cheese in medium sized bowl.
  3. 3
    In another bowl, whisk together olive oil, vinegar and shallots until well blended.

    Gradually add the vinaigrette mixture to the cheese.

    FOR ASPARAGUS:.
  6. 6
    Cut spears diagonally in 1/2 inch pieces, leaving tips whole.

    Stir-fry pieces in butter or hot oil, in a skillet or wok at medium high heat.

    Stir constantly until tender-crisp, 3 to 5 minutes.

    Ladle sauce over asparagus and serve immediately.
