Asian Chicken Salad (No Noodles)

At last a Asian chicken salad with out deep fried noodles.

SERVES 4 (change servings and units)

Ingredients

  • 1/3 cup asian-style dressing, made with sesame seeds
  • 2 tablespoons lime juice
  • 8 ounces cooked chicken, shredded
  • 6 ounces coleslaw mix
  • 1 cucumber, halved lengthwiese seeds scraped out and thinly sliced
  • 1 red bell pepper, cut into narrow stips
  • 1/4 cup cilantro, chopped
  • 5 ounces baby greens
  • 1/4 cup cashews or peanuts, chopped

Directions

  1. 1
    Whisk dressing and lime juice in a large bowl. Add chicken, coleslaw, cucumber, pepper and cilantro.

    Sereve on greens and sprinkle with nuts.

Scaled this back for 2 and was quick and easy to put together especially when I had some dry slaw left over from the previous day (may own mix of red and green cabbage, grated carrot and spring onion), added the other vegetables not the cilantro though as we don't care for it and the chicken was already shredded for lunches. I made the dressing from JustJanS recipe of Low Fat Asian Style Coleslaw for Two which complimented the dish really well. Thank from the DM and myself for a great filling lunch (this made a lot) Debbwl, made for Edition 9 - Make My Recipe.
