Applesauce Waffles

These waffles make a yummy breakfast treat! The recipe was clipped from the Houston Chronicle - not sure how old but the clipping is pretty-well yellowed!

SERVES 4 -6 (change servings and units)

Ingredients

    In a medium bowl mix flour, baking powder, sugar and salt.
  2. 2
    In a smaller bowl, combine egg yolks and milk and beat well. Stir into dry ingredients. Add the applesauce and stir well.
  3. 3
    Beat the egg whites until stiff. Carefully fold into batter (don't overmix).
  4. 4
    Pour about 2/3 cup batter onto a preheated waffle iron. Close and bake about 3 minutes. These waffles are fairly soft, so if you like them crisper cook about 1 minute more.

    Serve topped with a dollop of whipped cream and a couple of peach slices.

Mmmmmmmmmm! This was so easy to whip up and tasted awesome. I made them in a Belgium waffle maker, and it was like eating dessert for breakfast. Very soft and fluffy. I used cinnamon applesauce and dusted the whipped cream lightly with cinnamon. Made for Summer 2009 Photo Tag.

    Made this using a homemade, slightly chunky applesauce & it was soft enough to blend in well with the other ingredients! These waffles were very easy to put together! Also did a silght mash job on the peaches for some VERY TASTY WAFFLES! Thanks, much for sharing your recipe! [Tagged, made & reviewed as a bonus in the current Summer Spectacular]
