    Divide shredded fresh mint among the compartments of an ice cube tray, and fill with water. Freeze until solid.
  2. 2
    Steep peppermint teabags with the boiling water for 10 minutes, then remove the teabags and chill tea until cold.

    Combine apple juice with the chilled peppermint tea and fresh lime juice.
  4. 4
    To serve, fill glasses with mint ice cubes and chopped apple, topping with peppermint tea.

Nice and refreshing for a warm summer day. The taste of apple is a subtle sweet change for ice tea. Its fresh mint ice cubes and apple chunks make it festive and party worthy. I would make this again probably without the chopped apple. Thanks! Made for ZWT5 for Cooks With Dirty Faces.
