Apple Sausage Pancakes With Cider Syrup

A nice, hearty Fall breakfast. Use your favorite pancake mix.

SERVES 4 , 8 pancakes (change servings and units)

Ingredients

Cider Syrup

Directions

    CIDER SYRUP: In medium saucepan, combine sugar, cornstarch and pumpkin pie spice; stir in apple cider and lemon juice.

    Cook, stirring constantly, until mixture thickens and boils for 1 minute.
  3. 3
    Stir in butter. Reduce heat just to keep syrup warm while making pancakes.
  4. 4
    Heat griddle.
  5. 5
    PANCAKES: In small bowl, beat egg on high speed until thick and lemon colored, about 5 minutes.

    Stir in pancake mix, milk, oil and cinnamon.
  7. 7
    Fold in apples and sausage.
  8. 8
    Grease griddle lightly before making each batch.

    Pour batter from 1/4 cup measuring cup onto hot griddle. Bake until bubbles appear, about 2 minutes. Flip and cook another 2 minutes.

    Serve with hot Cider Syrup.

ABSOULTELY A GREAT BREAKFAST! We were so happy with pancakes made this way, & then with the addition of the cider syrup, well . . . OUTSTANDING, & a recipe that will be made again & again around here! I might even have to give up using my often-used corn syrup! Thanks for sharing a wonderful keeper of a recipe!     My GD Carly and I had a first day of school pancake breakfast for the neighborhood kids and this seemed like the perfect send off. One recipe gave me 7 4-inch pancakes with about 1 cup of leftover syrup. The syrup I saved in 2-oz cups to be used as a topping for a vanilla ice cream treat when their day was done. Excellent breakfast which I'm sure to repeat in the not-too-distant future. Thanks so much for sharing.
