American Goulash

Growing up in Boston, I never knew that this 50's "once-a-week-at-home dinner" and "once-a-week-at-school lunch" was a regional dish! I still make this probably once every 2 weeks. Easy, cheap and comfort food all rolled into one huge pot! (It is always called American Chop Suey here, but while I was living in LA friends called it Goulash - so I've compromised!)

SERVES 8 -10 , 1 pot (change servings and units)

Ingredients

Directions

    Brown ground beef, onion and pepper.
  2. 2
    Season with garlic salt and pepper.
  3. 3
    Add tomatoes and tomato sauce.
  4. 4
    Simmer 10 minutes while macaroni is cooking.
  5. 5
    Boil macaroni al dente, drain, rinse.
  6. 6
    Return macaroni to pot, add beef mixture.
  7. 7
    Serve in bowls with shredded cheese.
  8. 8
    Even better left over and reheated (add a little tomato juice when reheating, if too dry).

    We call it Goulash in the South as well, just a couple of modifications to give it a different twist. This is great for a quick easy dinner, I omitted the green pepper and used rotel instead of tomatoes and add a can of pinto beans. Great one dish meal.

    I've always heard of goulash but I have never eaten it before until last night. I made this last night and my daughter and I thought it was very good! It was so simple and quick to make. The only thing that i changed was the BELL PEPPERS! Believe me we are not finicky eaters around here except for BELL PEPPERS(LOL) so of course I left them out and I did grate in 2 cloves of garlic. I was too tired last night to grate the cheese so we ate without and it was fine that way but tonight I look forward to adding the cheese. By the way this will feed an army! It made a big pot full! Thanks for sharing this recipe I will make it again and again i'm sure! =)

    My family loves this recipe. We like it best when I omit the pasta and spoon the goulash over a bowl of mashed potatoes.
