Amazing Broccoli Pie

This is a terrific breakfast or brunch recipe. So quick and so easy - You must make sure you serve eggs and egg-rich foods immediately after cooking or refrigerate and serve within 3-4 days. And don't forget to refrigerate any leftovers right away.

SERVES 4 (change servings and units)

Ingredients

6 eggs
1 1/2 cooked broccoli, chopped
1 garlic clove, finely chopped
1 tablespoon crumbled goat cheese and grated parmesan cheese or light cream cheese and grated parmesan cheese
1/2 cup low fat cottage cheese
1/2 cup green onion, chopped
1/2 cup milk
1/2 cup Bisquick baking mix
salt and pepper
cooking spray

Directions

Spray a 9-inch pie plate with cooking spray. Set aside.

Spray a ninsrick skillet with cooking spray. Heat over medium heat. Sauté green onions and garlic for 5 minutes or until transparent. Stir in broccoli.

Layer broccoli mixture and cottage ccheese in pie plate. Set aside.

Whisk eggs with milk and baking mix; season weith salt nad pepper.

Pour over cottage cheese in pie plate.

Sprinkle top with goat cheese and parmesan cheese.

Bake in a 350F oven for 25 minutes or until a knife inserted near the center comes out clean.
