Alan's Quiche

Even "real" men will eat this quiche...and ask for seconds!

SERVES 6 , 1 pie (change servings and units)

    In a preheated 425-degree oven, bake the pie shell for about 8 minutes. After removing the shell from the oven, flatten the bottom with a spatula or fork.

    Combine the chopped onion and uncooked bacon in a large skillet. Cook over medium heat until bacon is crisp. On a plate lined with paper towels, drain the bacon and onions. When cool, crumble the bacon into small pieces. Sprinkle the bacon and onions over the bottom of the pie shell.

    Combine the Swiss, cheddar, and mozzarella cheeses in a bowl. Cover the bacon mixture with the cheese.

    In a mixing bowl, whisk together the eggs, half-and-half, salt, and pepper. Pour the egg mixture over the contents in the pie shell.

    Bake in a preheated 375-degree oven for about 50 minutes, or until a knife inserted in the center of quiche comes out clean. Serve in slices either hot or warm.
