I'm always trying to get my DH to eat his vegetables, so this is what I came up with today.

SERVES 2 (change servings and units)

Ingredients

Directions

    Mince dill and chives.
  2. 2
    Bring vegetable stock to a boil, add beans and cook 1-2 minutes.
  3. 3
    Reduce heat to low and cook for 10 minutes or until tender.
  4. 4
    Remove beans from stock and toss with chives and dill. Cover tightly and let sit for 1-2 minutes.
  5. 5
    Add pepper if desired.

What an easy and creative spin on green beans! When I tossed the hot beans with the herbs this wonderful aroma wafted into the kitchen. I think the amount of herbs is excessive for just one cup; I had lots left over on the plate and the inside of the bowl after serving. But instead of cutting back on the herbs I would increase the beans, because the flavor will have you going back for seconds. Just before serving I drizzled a little extra virgin olive oil.
