Marjorie Johnson, of Robbinsdale, Minnesota, was a finalist with this recipe in the first National Festival of Breads a bread-baking competition, sponsored by King Arthur Flour and Kansas Wheat. More than 500 home bakers from around the country entered the National Festival of Breads, which sought the best original bread recipes from home bakers throughout the United States. Congratulations Marjorie!

3 loaves (change servings and units)

Ingredients

  • 1 1/2 cups warm water (100 to 110 F)
  • 4 teaspoons yeast (Fleischmann's Active Dry)
  • 1 teaspoon granulated sugar
  • 1 cup apple, finely chopped, peeled
  • 1 cup banana, mashed, ripe
  • 1 cup carrot, finely chopped
  • 1/2 cup nonfat dry milk powder
  • 1 tablespoon orange peel, freshly grated
  • 2 teaspoons salt
  • 1/4 cup canola oil
  • 1/4 cup honey
  • 1/2 cup flax seed, ground (golden)
  • 5 cups whole wheat flour (King Arthur Unbleached White )
  • 1 7/8 cups unbleached bread flour (King Arthur )

Directions

    In electric mixer bowl, combine water, yeast and sugar. Let stand 5 minutes to proof yeast. Stir in rest of ingredients. Using dough hook & knead 5 to 8 minutes on low speed. If dough doesn't form a ball around the dough hook add 1 to 2 T additional flour.

    Place dough in greased bowl, cover & let rise in a warm place until doubled in size. Punch down dough.

    Divide dough into 3 equal pieces. Roll each piece into a 12 x 8 inch rectangle. Starting with the short side, roll up as for a jellyroll; seal edges & ends.

    Place in greased 8 1/2 x 4 1/2inch loaf pans. Cover, let rise in warm place until double.

    Bake in a preheated 375 degree F oven for 25 to 30 minutes or until golden brown and done. Remove loaves from pans to wire racks to cool. Brush with butter if desired.
