A Really Good Cilantro Sauce

This is a very versatile sauce. It can be used with chicken, pork, fish, pasta, and beef. I thought I had lost my recipe and after much searching I found it rewritten on a piece of scratch paper! I decided to post it here for safe keeping and others to enjoy!

SERVES 20 -36 , 1 Quart (change servings and units)

    Put cilantro into a blender, a few bunches at a time.

    It will take a while to break down the cilantro, but eventually all 6 bunches will fit. Using a food processor will effect the texture and not in a good way.

    Gradually add all other ingredients except the oils.
  4. 4
    Add oils last, slowly to emulsify.
