I guess everyday can be St. Guinness Day if I get to eat this! Being a TX girl, I love Gulf Coast shrimp. However, have always had shrimp with a red horseradish cocktail sauce. This was a delightful change of pace. I always boil my shrimp in water with cayenne and salt so they have a little zip on their own, so these paired nicely with the creamy mayo sauce. I used jarred Thai peppers, seeds and all. Really terrific simple meal. And of course, what doesn't go perfectly with Guinness? For photo tag.
