This was a great light and tasty soup. I served it with some ham and cheddar roll up s(Ham and Cheddar Roll Ups) for a complete meal on a busy night. The leftovers were nice for my lunch the next day.

This is very tasty soup. I chopped up the garlic and used frozen broccoli since I had some on hand. I added a little shredded cheese as well. This is a great dish for anyone on the South beach/Sommersizing plan!

This was a fantastic side to a light Halibut dish I made. I added basil with the onions, a few portebellas and a touch of cream. Yum!

A tasty soup, but I thought it was missing something, so I added cooked chicken and some tomato/basil Mrs. Dash. My kids asked me to make it again tomorrow! I think next time I try it I'll add a little cream to cut the acidity. BTW, I didn't peel the tomatoes and they were great.
