Zucchini/Yellow Squash Stir Fry

A lovely veggie side dish. Wonderful summer squash blends nicely with onion in this quickie stir-fry.

SERVES 4 (change servings and units)

Ingredients

Directions

    Rinse zucchini and squash.
  2. 2
    Cut into thin slices, discarding stems and bottoms.
  3. 3
    Slice onion into thin rings.
  4. 4
    Spray a wok or large, covered frying pan with cooking spray.
  5. 5
    Melt butter in pan over medium-high heat.
  6. 6
    Add zucchini, squash and onion.
  7. 7
    Stir-fry for several minutes, until tender-crisp.
  8. 8
    Season with salt and pepper, to taste.
  9. 9
    Add 3 T water and cover.
  10. 10
    Reduce heat and simmer for 6-8 minutes or until mixture meets your criteria for doneness (We like ours slightly soft, others may prefer either crisp or very soft).

I altered the recipe a smidge, but this came out wonderful! I made this with a lemon rosemary chicken and they complimented eachother so well. My boyfriend proclaimed that he hated squash but he was willing to try it again, after this he said I really like squash I don't know why I hated it... AWESOME because squash is one of my faves and I never got to eat it.... I used smart balance margarine and took the suggestion of a reviewer and used lemon juice instead of water. i seasoned the squash with salt fresh ground pepper and fresh rosemary... this was excellent with our meal thank you so much!

    I did not use the water, and also added a little no-salt spicy seasoning. It is wonderful and, even better, fresh from the garden!

    This was very good. Instead of 3 tbls water I added 3 tbls of lemon juice. It was very good and almost as good as our grilled zucchini and squash. Much more convenient when you are in a hurry. thanks

    This was really good and easy! I added broccoli to the mix, and only steamed the veggies for a couple of minutes.
