Zucchini and Bacon Bake

This is from my neighbour and good friend, Ronnie, who is mother to five great kids. They all love this concoction and so do we. It serves 6-7 unless it is put in front of our former French exchange student, Emma. In that case, it serves one.

SERVES 6 (change servings and units)

    Before you start, you need to know that, you can speed up the preparation time if you use a food processor to grate the cheese and zucchini, and chop the onion.

    Preheat oven to 350 degrees.
  3. 3
    In a large bowl, combine all ingredients -- in the order listed. Mix well after each addition.

    Put everything in an 11" x 7" pan. A 9" x 13" pan works, too.

    Bake for 40-45 minutes, or until golden brown.

    Check the bottom. It sometimes browns faster.

    Easy to throw together and I didn't even pull out the food processor. Dd loved it and gave it "20 million stars and I don't even like zucchini!" Dh and I thought it was tasty, but would like it better with more zucchini and less egg. One tip--if you don't have self-rising flour, just use 1 cup all purpose flour, 1/2 T baking powder and 1/2 tsp salt.

    Every now and then a great recipe comes along that is a sure crowd pleaser. This is one of those! First bite and you say, "Oh My!" My hard to please family said it should get 10 stars!!! This disappeared in a hurry. Next time I may have to double the recipe. Thanks for a keeper that I know will make many reappearances at our table!
