Zucchini With Sun-Dried Tomatoes

I'm bored with all the usual zucchini recipes, you know, with parmesan, pancakes, etc., so I decided to experiment a little. This is a great fast and easy side dish for any dinner. You must use oil packed tomatoes or you won't have the flavor.

SERVES 2 (change servings and units)

Ingredients

Directions

    Cut zucchini into 1/2 inch rounds, then cut each round into quarters (you should have about 2 cups).

    Melt butter in nonstick pan and add zucchini.
  3. 3
    Saute zucchini, stirring often, about 3 minutes.
  4. 4
    Add garlic and saute for 1 minute.
  5. 5
    Add tomatoes and continue to saute, stirring often, for about 2 more minutes.
  6. 6
    Toss with salt and serve.

I had this over pasta with some extra olive oil and with parmesan on top. It was a very nice, quick meal. Thanks for posting!

    I was browsing through zucchini recipes when I came to this one. I had the ingredients...it was different from the way I usually made zucks, so I though I would give it a try. Good move! It was fast, easy and tasted great

    Very good and very easy to make. I don't make it often since the sun-dried tomatoes are a bit pricey, but when I do make it, the whole family eats it up!
