Zucchini They Will Eat!

Quick and easy- hot and cheesy! Seasonings, bacon and two cheeses make this a really yummy side that is sure to please the pickiest people! Southern women will add bacon and cheese to any healthy veggie!

SERVES 4 (change servings and units)

Ingredients

Directions

    Fry bacon until crisp and drain on paper towel. (I use turkey bacon and a little cooking spray but you can use any kind you choose).

    Drain grease from pan leaving just a light coating.
  3. 3
    Slice zucchini and add to pan.
  4. 4
    Add basil, salt and pepper and sautee until crisp tender - or softer if you like.
  5. 5
    Add onion, bacon and cheeses and heat just until cheese to begin to melt.
  6. 6
    If you like you can put it under the broiler for a few minutes to brown the cheese.

    Serve~.

Oh this was sooooo good. I love zucchini but my husband doesn't care for it. I made this for dinner and he complimented this recipe repeatedly. I'm thrilled that I can have zucchini more often now. Thank you for sharing.

    The zucchini is taking over my garden, so this recipe has sure come in handy! I love it many different ways and this one is so good!

    We love zuke so this was really good. Did a couple of minor changes...used two spring onions, added a couple of sliced mushrooms and minced garlic and used mozzarella in lieu of cheddar. I also made this a couple hours earlier so put the mixture (without the cheese) into a casserole dish and sprinkled the cheese on top. Covered with foil and baked for 20 minutes prior to serving. I'm a Sicilian, not a southerner, so prefer my zuke 'al dente' Thanks mama!

    wow. didn't think this would turn out but gosh, it was delicious!!!! fried the zucchini with about 6 fresh crushed garlic cloves, white pepper, and a lil evo. used turkey bacon and cooked in mic. added extra basil and onion. used mont pepper jack cheese and there wasn't a bit left.
