Zucchini & Cheese Patties

This is a great basic recipe for zucchini patties. We love them just like this but you can adjust to your taste by adding garlic, chili powder or even grated carrots. We love dipping them in sour cream too. ENJOY!

SERVES 6 , 4 -6 patties (change servings and units)

    Mix the first 5 ingredients together.

    Next, mix in the shredded zucchini.

    Drop by spoonful into butter or cooking oil.

    Fry until golden brown on both sides.

This was a bit of a surprise. I kind of thought the ingredients were rather bland but this was really good. I did a lot of garlic but that was all and I found these quite tasty. Made quite a bit too. Was planning to freeze half but low and behold they all disappeared at one sitting. Thanks for the recipe Merlot

    These where great! I also grated the onion as well as a large clove of garlic also added some fresh basil, because I had tons of it! I grated mozzarella for the cheese. Might add some fresh grated Parmesan too next time. I could have eaten them all by myself! Thanks for posting! Koechin

    These were great! I also used Bisquick Clone and then cheddar. We served it up with sour cream. They didn't even realize it was zucchini and thought it was potato. LOL! Thanks, Merlot!

    These are delicious! I wouldn't change a thing as they are so good just the way they are! I only substituted egg beater for the egg and cooked them in a couple Tablespoons of olive oil. I used the mozzarella and will try the cheddar next time! I dipped in sour cream as suggested and that was tasty too! Thank you for sharing such an easy and delicious treat Merlot!
