Yummy Hamburger Casserole

This is my favorite hamburger casserole. I like to serve it over the top of garlic mashed potatoes. Don't let it's unusual ingredients stop you from trying this--it is wonderful!

SERVES 4 -6 (change servings and units)

    Preheat oven to 400 degrees.
  2. 2
    Brown beef and onion in a large skillet; drain.
  3. 3
    Add beef back to skillet and stir in rice, salt pepper, soup and water; mix well.
  4. 4
    Place coleslaw mix in an ungreased 2 quart casserole dish.
  5. 5
    Spoon beef mixture over coleslaw.
  6. 6
    Cover and bake about 45 minutes.
  7. 7
    Uncover, top with cheese and pop back in oven for another 10 minutes uncovered or until cheese is melted and casserole is hot and bubbly.

While I did make a change to this recipe in that I used my crockpot, fresh cabbage and carrots, beef broth instead of water, and some garlic. This just had no HMPF to it. Just kind of bland. The crock worked out fine and I think it would have been much better with some seasonings and I wish I would have listened to a previous review and added more liquid for the basmati rice. As I am not so good at the seasonings thing (thats why I always am on zaar) I am not sure what to suggest, just know it needs more of something! But it did use what I was looking for and I may try again. Thanks.

    We enjoyed this for an easy, comfort-food supper. I did make a couple changes, using a can of diced tomatoes instead of condensed soup and adding a bit more water to accomodate for basmati rice. I also added some spicy pepper flakes because we love hot food. The cheese bubbling on top was the crowning glory. Great way to sneak cabbage into a meal for picky eaters!

    This was easy & delicious!! It did seem weird to use coleslaw mix, but that's exactly what I did - one bag Dole Classic Coleslaw. I had a shredded cheese blend on hand so I used that. DH went for seconds!! The only thing I had to change was the casserole dish size. Couldn't fit all this good stuff in a 2-quart, so had to use a 3. This one goes in my "keeper" book for busy-night suppers. Thanks - MG!!

    made this last night the only thing i changed is I added alittle red wine vinegar for alittle tang. This is a keeper tastes alot like cabbage rolls without the work.
