Wanted something quick and easy and this fit the bill. Just me here tonight so it worked out great. Just had salsa but that was enough. Thanks, sure I will make again.

I've been making these for years, but never saw a recipe for them before. I don't use butter, and we like Swiss, jack, vegetable jack, jack and cheddar blend cheeses. We often add canned green chiles, black olive slices, hot sauce, avocado slices, bacon crumbles, and...well just about anything we have on hand! We have these for breakfast, lunch, dinner, or any time we want a quick tasty snack. This is the perfect "fast food!" Thanks for posting - something I never thought of doing - so everyone can enjoy!

I had these quesadillas for a quick and yummy lunch. Added a little refried beans to the tortilla before putting them together in the skillet. So good!
