This is a must for any extended family get-together when I double the recipe. I also like this as an accompaniment to grilled chicken or on top of a baked potato. Quick and tasty! (Can sizes are an estimate b/c I don't have them on hand.)

SERVES 20 (change servings and units)

Directions

    Except for one can of the Rotel tomatoes, drain canned vegetables.
  2. 2
    Mix together all ingredients, making sure spices are well blended in the veggies.
  3. 3
    Cover and refrigerate, allowing flavors to blend.
  4. 4
    Serve with chips, on baked potatoes, with grilled chicken, on tacos and burritos, or anyway you can think of!

    We really enjoyed this! Although I did make a few changes: used fresh tomatoes, fresh chilies, fresh garlic, cumin seeds, frozen corn and added fresh squeezed lime juice. Very delicious! Thanks!!

    I could make a meal from this! Well, as a matter of fact, I guess I did--I made this as a Friday evening snack and am embarrassed to admit, my husband and I ate so much we weren't even hungry for dinner. We ate it with Tostitos Scoops, which were perfect for scooping up big bites. I did use minced fresh garlic instead of garlic powder, but otherwise, no changes. We loved it--thanks for posting!

    My whole family loved this salad! I served this with crushed chips and sour cream. I used fresh cilantro and feel this is a must. Because the majority of the ingredients came from cans,I was truly surprised by the exceptional flavor and beautiful color.
