Out of an old 1998 WW cookbook called "15 Minute Cookbook" I have this marked as "great". If you don't care for the strong lemon like flavor of cilantro you can substitute parsley if you prefer. This is great served with black beans, pineapple wedges and fresh strawberries. Hope you enjoy!

    Coat a large nonstick skillet with cooking spray; place over high heat until hot.
  2. 2
    Press chops with palm of hand to flatten slightly; add to skillet and cook 1 minute on each side or until browned.

    Reduce heat to medium-low.
  4. 4
    Combine salsa and lime juice; pour over chops.
  5. 5
    Simmer, uncovered, 8 minutes or until chops are done.
  6. 6
    If desired, sprinkle chops with cilantro.

Very enjoyable! Don't omit the cilantro, it adds punch. I used medium Chi Chi's Fiesta salsa. My boneless pork chops were 8 oz each, so my simmering time was 40-45 minutes to 170 degrees. Just follow your digital meat thermometer to the desired degree of doneness. We enjoyed the amount of lime juice in the recipe. Made for I Recommend Tag based on the review by Shelby Jo.

    Good, quick recipe! A bit too much lime juice for my taste, so I'll adjust that next time. Although they are good on their own, I also sliced the chops in thin strips and rolled them in tortillas with light sour cream. It was really good. Thanks for the recipe.

    Oh my, this recipe is delicious!! I made if for dinner tonight. I used a little more salsa than the recipe called for (I used 1 cup of salsa) I love the touch of the cilantro it made if taste so refreshing!! I served this with Lemony rice pilaf #16512 and it was a perfect pairing! Thank you so much for sharing this recipe!
