This is a great recipe out of my Weight Watchers "Take-Out Tonight!" cookbook. This also makes an excellent dip for veggies or baked tortillas. This has 6 points per serving, I also like to add in some 0 point things like salsa, pickled jalapenos and cilantro. DH who isn't watching points likes to throw on some shredded cheese.

SERVES 4 (change servings and units)

Ingredients

Directions

  1. 1
Preheat the oven to 400 degrees F.
  2. 2
Place the taco shells on a baking sheet and warm them in the oven, about 8 miuntes; keep warm.
  3. 3
Meanwhile, heat a large nonstick skillet over medium-high heat.
  4. 4
Swirl in the oil, then add the beef, onion, garlic, and seasoning mix.
  5. 5
Cook, breaking up the beef with a wooden spoon, until browned, about 8 minutes.
  6. 6
    Stir in the water.
  7. 7
Cook, until the liquid has evaporated, about 3 minutes.
  8. 8
Stir in the beans and heat through.
  9. 9
Spoon about 1/4 cup of the beef mixture into each taco.
  10. 10
Top each with the lettuce, tomato, olives, onion, and sour cream.

Yummy, hearty taco filling! I used 96% lean ground beef and used cooking spray in place of oil. The refried beans serve to stretch the ground beef as well as add some flavor and texture. We had this filling in hard and soft taco shells and we had a taco fixins bar. I may add refried beans to my taco filling all the time now. Thanx for posting!

I used ground turkey simply because I didn't have any beef. I also used soft whole wheat tortillas. Thanks for a yummy tasty lunch. Made for 1-2-3 tag.

Easy to make and enjoyed by the family. I did change this up a bit. I used a pound of burger, a packet of taco seasoning, 3/4 cup of water and a can of refried beans. I also omitted the onion and the olive oil. No one even noticed that there were beans in this. Nice, different way to make tacos.

I did alter this a bit. I used 1 lb of lean ground beef, omitted the olive oil, only 1/2 an onion and a packet of taco seasoning. I also used more water. These came out very good. Large quantity, not sure how many servings exactly, but we have leftovers. I also omitted the olives, but added diced avocado and used light sour cream instead of nonfat. I felt this method was a little less messy to eat because the beans helped hold the meat together. Yum!
