Wild Blueberry Chicken Breasts

Ingredients

    Dust chicken with the Cajun spices.
  2. 2
    Heat olive oil in a skillet over medium-high heat and cook chicken until brown and almost cooked through, about 7-10 minutes.

    If the breasts are thick, you can cover the pan and cook for 3-4 minutes longer.
  4. 4
    Remove the breasts from the pan and keep warm.
  5. 5
    In the same pan, sauté garlic and onion over medium heat for 3-5 minutes, until transparent.

    Add red wine and reduce until mostly evaporated.

    Add blueberries, zest and salt.
  8. 8
    Simmer for 5 minutes.

    If you are using frozen blueberries, be sure that they are heated through.
  10. 10
    Season with salt and pepper, to taste.

    Take pan off the heat and let sit for about 5 minutes to allow the flavors to blend.

    Spoon mixture over chicken breasts and serve immediately.

    Tasty! I used a little butter also. We used a berry mix (boysenberries, black and blueberries) and it was good

    More a relish than a sauce, the blueberries and onions paired well together to make a wonderful topping in this simple dish. I used a very fine dice on the onions and frozen wild blueberries - which may be why the berries retained their shape. Since my cajun seasoning had salt in it, no additional salt was needed. Don't foget the lemon zest, it really sparks up the flavor.

    Love the blueberry sweetness with the cajun spices. I agree with Toni, this is not saucy. I, too, didn't allow the berries to cook long enough to break down - much more attractive. I used Dancer's Cajun Spice Blend #36405.
