Great recipe! Thanks for posting it. For the person that mentioned it is bland, I recommend adding a teaspoon of apple pie or pumpkin pie spice to give it a kick!

Yum-O!!! I will be making these regularly. In the middle of putting everything together I realized i didn't have any milk....yikes. So I searched the fridge and found a cup of yoplait light apple streusle yogurt and used that instead...I know, weird huh, but it worked! Who knew? I too added some cinnamon, also a dash of nutmeg and used sunflower seeds instead of nuts since I didn't have any of those either! They are SO MOIST and delicious. And good for you to boot.

These are good for breakfast with good flavor. I thought the flax flavors paired exceptionally well with the apples. I forgot to add the nuts, so ours was without and fine that way. I did find this to be a little crumbly and slightly on the dry side. The batter seemed a little thick, so maybe this could use a little more milk or another Tbs or two of oil. Easy to make and healthy.

This is a 10 star recipe! Loved these. They were moist and perfectly dense without being rubbery and just sweet enough. I left out the nuts, added 1 tsp ground cinnamon and doubled the recipe to fit into my mega muffin tins. I mixed a strusel topping which I layered into the muffin itself and used gala apples. I have been on the search for a "bran" muffin that could actually be enjoyed for quite some time. This is the one. Absolutley perfect in every way. Oct 22, 2006 Made these again this weekend and chopped the apples larger, added nuts and accidentally used 1 tsp soda instead of 1/2 tsp, they still turned out delish. I didn't realize this was a recipe I made before because I was using a print out vice the zaar cookbook. I think it speaks well of this recipe that it appealed to me twice and was delicious just as many times. I will definitely make this again and again!
