This is a fantastic option for those who are counting calories. There is no oil or sugar in the ingredients and they are less than 2 points each with Weight Watchers! This recipe was inspired by a cookbook called Volumetrics by Barbara Rolls. Top with fresh fruit (cooked bananas are great), fat free yogurt or honey.

SERVES 8 , 8 Pancakes (change servings and units)

    Mix up all ingredients with a fork or wire whisk.

    cook on a non-stick pan or use a small amount of olive oil or cooking spray for each pancake.

Excellent pancakes! Didn't really serve 8 for me - more like 2 - but then again I am a big guy.

    These were quite good, especially considering that they're fat free. My husband thought they were good, but not as moist or rich as the ones I usually make with melted butter. Even with a slightly drier texture, though, they have a great flavor and we'll have these again since we're trying to eat healthier.

    I did not have a mashed bananna so I substituted 1/2 cup of apple sauce. Had a great flavor. These puffed up while cooking but as soon as I took them off the heat they became flat. I'm pretty sure this had to do with my substitution. I would make these again with the bananna because they had a fantastic taste and weren't heavy tasting. I only got 6 pancakes out of the batter but two of these filled me up happily.

    This recipe is a full plate of yummy perfection! Each pancake rose up high and light, crisp on the outside and smooth on the inside. I did add 1/4 tsp. cinnamon for kick and enjoyed every bite. I love the fact that there's no sugar or added fat to these and no one missed it! MERP'd for All New Zaar Cookbook Tag. Thanks Emily!
