White Corn & Avocado Salsa

This is another delicious recipe served by my wife's mom while we were visiting this past Christmas. She served this with a spicy shrimp cake appetizer, but this salsa would be good served plain with tortilla chips or as a topping for chicken or fish tacos. I'm sure the list goes on - enjoy!
SERVES 4 -6 , 2 1/4 cups
Ingredients
- 1 cup frozen white corn, thawed
- 3/4 cup avocado, diced
- 1/4 cup cilantro, freshly chopped
- 3 tablespoons white onions, finely chopped
- 2 tablespoons poblano chiles or jalapeno peppers, seeded and finely chopped
- 1 tablespoon fresh lime juice
- 1/4 teaspoon salt
Directions

Combine all ingredients.2
Stir together gently.3
Serve while cool.
