White Chocolate/Coconut/Macadamia Cookies

    Heat oven to 375.

    In small bowl,mix the flour,baking powder& soda& salt.
  3. 3
    In large bowl,combine the butter,sugars& vanilla extract.
  4. 4
    Beat at high speed,scraping the bowl often,beat mixture until creamy (1-2 minutes).

    Add in the egg,beat until well mixed (1 to 2 minutes).

    Reduce the speed to low,gradually adding in flour mixture.
  7. 7
    Beat well after each addition (1 to 2 minutes).

    With your hands,stir in the white chips,coconut& nuts.

    By rounded TB,drop the dough onto nongreased cookie sheets.

    Bake for 8-11 minutes or until edges are slightly browned.

    Let cookies cool for 2 minutes before removing to cool on rack.

I found macadamias in my pantry and figured I better use them since I didn't know how long they were there! These were very good cookies but a little heavy on the white chips for me. It seemed the dough was just there to keep the white chocolate together. But my BIL ate nearly all of them!

    This was a really good cookie recipe! We came home from Hawaii with 7 lbs of macadamia nuts so we are making cookies alot! These were really easy and they came out great!! Really yummy! Will be making again! Thanks for sharing!

    Hey there Ocean Ivy - I'd never made this type of cookie before, so thanks for making my first batch so yummy! A note on toasting coconut: According to Joy of Cooking, you should toast at 325 for ten minutes, but I think they meant for fresh coconut. (I used a bag of slightly stale store-bought sweetened coconut leftover from something and mine burned So, the lesson for all the novice coconut toasters is: bake at 325 on a cookie sheet, but check every 2-3 minutes My cookies took about 10 minutes in a 350 oven (I used convection bake).

    Very nice tasting cookie. My dough was a little sticky and I wish I would have added a little more flour. Maybe the humidity has something to do with it. Also I set my cookies on paper towels to cool as I didn't have a rack and the paper towels were totally grease soaked. I will try again using more flour, 1 2/3 cups to 3/4 cup butter just doesn't seem like enough.
