White Cheddar Mashed Potatoes

This recipe is from the Rock Bottom Brewery restaurant in Portland, Oregon.

SERVES 6 -8 (change servings and units)

    Cover the potatoes with water in a large saucepan and add 2 tsp salt. Bring to a boil and cook until potatoes are tender, about 20 minutes (check with fork). Drain well.

    Place the hot potatoes in a large mixer bowl. Using an electric mixer, beat until smooth. Add the butter and sour cream and whip for 20-30 seconds. Add the remaining 1 tsp salt, white pepper, and cheddar. Whip to incorporate. Add the cream and whip until the potatoes are smooth.

    What a treat. Sorry I'm so late giving my review! We've made and enjoyed these a few times, I never really added sour cream mixed into mashed potatoes before but everyone really liked it, its like a loaded potato but all mixed together already. I use salted butter and no extra salt. DF asked for bacon crumbles with them next time.

    Zaar Tag OMG this was delish. I made this 3am. I was feeling a bit Peckish and am I glad. I could live on mashed taters 1. Simple to make 2. Just a few ingredients on hand 3. Delish. Saved some for potato pancakes 4. Definetely a keeper I've put sour cream in potatoes but not whipping cream-this was great thanks for sharing
