Whipped Eggs on Toast

I found this in an Aussie magazine. On one hand I thought "why would you bother"? but on the other.... these eggs look sooooo pretty!!!!

SERVES 4 (change servings and units)

Ingredients

  • 4 eggs
  • 4 slices bread, toasted, thick, rustic style
  • 4 tablespoons caesar salad dressing or Dijonnaise mustard
  • 1 tablespoon chives, finely chopped

Directions

  1. 1
    Preheat oven to 170c.
  2. 2
    line a baking sheet with baking paper.
  3. 3
    Carefully seperate eggs, keeping yolks whole.
  4. 4
    Using a mixer, beat whites with a pinch of salt into soft peaks.
  5. 5
    Spoon into puffy mounds on centre of toasts; shape a hollow in the top.

    Slip a yolk into each hollow.
  7. 7
    Bake for 5 minutes.
  8. 8
    Spoon 1 tablespoon of dressing over yolks.
  9. 9
    Bake 5 minutes more, or until whites are beginning to turn golden and yolks set to your liking.

    Sprinkle with the chives and serve.

I made a double batch this morning but unfortunately made my wells a little too shallow and lost two yolks to the baking sheet. So worth the extra few minutes it takes to prepare the eggs. The family wants a repeat of this soon only with a little less caesar dressing on them. Made for Aussie/NZ RS#32.

    This was a nice change from just a regular eggs on toast sort of breakfast. Pretty easy to make, though I did have one egg break open in the oven. Our yolks stayed pretty runny which is how we like them, but I think it would be good if you allowed it to go a little longer as well so they were more set up. We used the caesar dressing on ours, and I cut up a french bread loaf for the toast. This would be a nice company breakfast.

    Wow, this was absolutely delicious!! We had company for the night and I made this for us all for breakfast and it was devoured! Well worth it!! Thanks for a delicious change Jan! EDITED AUGUST 2006 to add a picture. We really do love this dish and make it often, I just realized I had never submitted a photo of it!

    I'm low carb-ing so experimented and did this on ham instead of bread. I also had an egg white left over from another recipe today so I added that and got what looks in the photo, like a small egg explosion LOL.. but that's simply what the additional volume of egg white did. I'd rather that my photo wasn't the default for this recipe please in case people get the wrong idea Taste: great! I liked it... it was a tasty lunch and was fairly quick and easy to make. Would I often go to the bother of whipping up egg white for just a different way to make eggs? truthfully probably not, but for a special occasion it's worth it and the taste was lovely. I didn't miss the bread either, but wouldn't add extra egg white next time becuase it got things a little out of proportion visually. Thanks!
