Weight Watchers OAMC Spinach Egg Cups to Go

This is a weight watchers recipe I've been using for years though I modify it slightly to acccomodate our tastes...sometimes substituting Mexican style egg beaters for the regular and also omitting mushrooms and adding more hot sauce. What I love about this is that the cups can be made ahead and frozen and simply reheated when needed. (remove foil cups first.) This is the original recipe which states it's a one point serving. Experiment with your own favorite cheeses and vegetables. Can also be served as an appetizer or snack.

SERVES 6 -12 , 12 muffin cups (change servings and units)

    Microwave the spinach on high for 2 1/2 minutes. Drain completely.
  2. 2
    Line a 12 cup muffin tray with foil baking cups. Spray the cups with cooking spray.
  3. 3
    Combine the egg substitute, cheese, mushrooms, spinach and onions in a bowl.
  4. 4
    Add hot pepper to taste.
  5. 5
    Divide evenly among the cups.
  6. 6
    Bake at 350 for 20 minutes or until knife inserted comes out clean.
  7. 7
    May then be frozen if desired.

    Iam suprised to see Iam the first one reviewing these! these are really good. You have to really like spinach to make and enjoy these. I made a batch to freeze to heat up in the morning for breakfast before i go to work. I think the next time i make them, i will double up the batch and double each muffin cup to a larger portion. If they are now only 1 point then it wont be that bad. thank you for sharing a "keeper".

    Great vegetarian OAMC breakfast They fit nicely into 1/2 cup containers for freezing. I used fresh spinach, so I ended up adding some extra egg to make up for the moisture thawed frozen spinach would have added. Skipped the hot sauce, so the only thing that would make it better next time is remembering to add salt/pepper instead.

    Delicious for breakfast. These are very savory. I think next time I make these I will try some blue cheese crumbles in the mix. Thanks for sharing this points friendly recipe.
