Weight Watchers Broccoli Cheese Soup - 2 Pts Per Cup

I got this recipe from someone at my Weight Watchers meeting. I don't know where the original recipe came from. It's very low points and I can eat it every day without getting tired of it.

SERVES 10 -12 (change servings and units)

    Mix chicken broth, frozen broccoli and tomatoes and chilies together.

    Simmer for 25 minutes or until veggies are tender.
  3. 3
    Cube Velveeta and put into soup pot.
  4. 4
    Simmer just until cheese is melted.
  5. 5
    This recipe freezes and refrigerates well. I make a large recipe at the beginning of the week and use it to snack on when I'm in danger of breaking my diet. I can have a large bowl and some crusty bread with it and still be under 5 points.

Easiest soup I have ever made. And it is delicious! I wanted it creamy so I took the soup mixture and put in blender and pureed it....yummy! Warning... let soup cool before pureeing or else you will have soup all over your kitchen too :-{

    I must have forgotten to review this. I LOVE this soup, and it's so easy to make. I like to use broccoli florets, as opposed to brocolli cuts because sometimes you can get some hard-to-chew pieces in the cuts. I also use the mild Rotel, it's less spicy but still has a kick. Going to make some right now!

    Five HUGE stars!! This was awesome; I made half the recipe for supper last night and DH and I really enjoyed. Since I used broccoli florets, I had to transfer them to my food processor for just a quick chop (otherwise it would have been too hard to eat) - I'd recommend buying broccoli cuts for this recipe. Will be making again!
