Hey guys! Well, after lots of searching I finally found a recipe for a LARGE, yummy, fluffy, high fiber, filling 1 pt pancake! Here is the recipe: Whole Wheat Apple-Cinna Pancakes This recipe was found at: http://www.healthdiscovery.net/forums/showthread.php?t=122138 It's a great recipe which really does produce fluffy delicious 1pt pancakes

SERVES 2 , 6 pancakes (change servings and units)

    Mix all ingredients until smooth.

    Note: Batter will be kinda thick. If it is too thick for you, add a tablespoon of water at a time until desired consistency.

    Heat a large skillet or griddle that has been sprayed with non-stick butter flavored cooking spray.
  4. 4
    Spoon two good sized heaping tablespoon fulls of the batter into the skillet per pancake and spread out slightly. Let cook like a regular pancake and then flip, allowing to cook another minuet or so. Serve!

    This is a great recipe! We now have these yummy pancakes every Saturday morning. I buy the individual 1/2-cup containers of applesauce and use it all.

    I've just about written off pancakes as a breakfast option as the points too were high and the filling factor too low. When I found this recipe I thought it was worth a try and I am so happy I did. Not only were the results really good - light and fluffy pancakes with a wonderful texture but the serving sizes were spot on and didn't want you wishing for more. Because there is no fat in the batter, you really must use a little oil or cooking spray to make these - used one of my GHG oils to do that. Also added a little vanilla extract to the batter and reduced the cinnamon to just 1 teaspoon. Thanks! Made for the Healthy Choices Tag Game.
