To make this drink suitable for non drinkers, omit alcohol and increase the pineapple juice to 1 cup. I like to add the ice to the blender also..n drink it like a slushy.

SERVES 4 -8 (change servings and units)

    Place the watermelon, pineapple juice, rum, liqueur and grenadine in the jug of a blender and blend until smooth.

    Divide the ice among serving glasses.

    Pour over watermelon mixture to serve.

    Yum! I'd never had a watermelon Mai Tai before and this was great! I didn't have pineapple juice, but had fresh pineapple, so I blended that in with the watermelon. it still came out delicious!

    oooh how yummy!!! i used a little less than half of a mini watermelon cause i wasn't sure how much 500 g was. also my pineapple juice was unfortunately older than i thought and had to use orange juice as a sub. but it was still a great drink! definately going to make these again in the summer!
