This is a really refreshing summer salad. Add a little feta cheese or goat cheese if you like. From our local paper.

    Combine watermelon, tomatoes, onion, cucumber, lime juice and oil in a large bowl. Season with salt and pepper. Cover and refrigerate for at least 1 hour.

I added about 1/3 cup chopped fresh basil. A light and refreshing summer salad, just perfect on a summer day. Great recipe!

    This was a very fresh and interesting salad. It was different but very yummy, loved the simple dressing of it, thanks! Make this for the Rail Riding Rowdies ZWT5.

    I had to try this ahead of Memorial Day to see if it would work and I must say it was refreshing, crisp (I didn't let it marinate for too long) and delicious. This would have been a definite five star if not for the red onion which really just detracted from the wonderful tastes. I will definitely make this again. Made for Memorial Day Challenge '08.

    The salad marinated for 2 hours. I really like the way that the watermelon absorbes the flavours of the dressing. I was a little aprehensive but it was wonderful. I added greek feta to the salad, for a nice salty contrast. Thanks so much for sharing Susie cooks... a new family favourite.
