Waikiki Chicken Salad

Sooooo good!!! My favorite chicken salad. I love it on Hawaiian rolls, but good on top of Bibb lettuce too!

SERVES 6 (change servings and units)

Ingredients

Directions

    In a medium bowl, beat cream cheese until fluffy.
  2. 2
    Mix in miracle whip and 2 tablespoons of reserved pineapple juice.
  3. 3
    Stir in pineapple tidbits (I sometimes use 2 cans if I want more pineapple), chicken, almonds and grapes.
  4. 4
    Chill until serving.
  5. 5
    Great on Hawaiian rolls, or on top of Bibb lettuce.
  6. 6
    ADD-IN IDEAS: maraschino cherries, mandarin oranges, cilantro, macadamia, walnuts or pecans instead of almonds.

    This may well become my favorite chicken salad too, Charmie - Perfect for a brunch, luncheon or pot-luck dish. Made it exactly as written, but since add-ins were suggested as an option … I also used cilantro for its color & flavor + 2 tbsp of raisins I soaked in the extra pineapple juice. I served it as a salad plate w/cucumber, egg & tomato slices at its side. The combo of fruits compliments the chicken very well & the almonds add a lovely textural crunch. Thx for posting this great recipe! It’s a keeper for us & will be enjoyed often.

    I used about 2-1/2 cups cooked turkey that I had frozen in my freezer for this in place of the chicken, also I increased the dressing slightly and used mayonnaise in place salad dressing as that is all I ever use, this is simply delicious, thanks for sharing Charmie!...Kitten
