This sauce is delicious on just about anything including plain white rice. Wonderful on grilled shrimp. It is the sauce used for the Grilled Vietnamese Jumbo Shrimp on Sugarcane Sticks that I posted. Great recipe with many variations!

    Peel carrot lengthwise with a vegetable peeler. Stack carrot slices and cut into very fine long julienne strips.

    In a bowl, mash the garlic with the sugar. Add remaining ingredients and carrot slices and mix well.

    You don't have to use that much fish sauce in order to get the taste. My MIL only uses a few tablespoons per cup of water and her sauce is TO DIE FOR. I always request a bottle of it to take home whenever she makes it for dinner. I can never seem get the recipe from her because she says she doesn't measure anything, just eyeballs everything. I think she may just be too lazy to jot the recipe down. Anyway, I also omit the vinegar, it's really not needed in the sauce, so if you don't have it on hand, don't worry about it.

    Excellent dipping sauce....tastes just like it's from a Vietnamese take out!! We dunked some wontons in this sauce and we loved it!! T didn't change anything, made the recipe as written. Easy peasy and a keeper...thanks Cheryl!!
