Velvet Smooth Cream of Potato Soup

This soup is easy to prepare as well as comforting. This is not a thick soup; but smooth and velvety with much flavor and very satisfying. A great soup recipe for the cold winter!

SERVES 6 -8 (change servings and units)

Ingredients

Directions

    Melt butter in large saucepan or dutch oven and saute the celery, onion and carrots until tender, about 20 minutes, add salt and pepper to taste.

    Add potatoes and parsley, toss until coated.
  3. 3
    Add broth, bring to a slow boil and cook until potatoes are soft.
  4. 4
    Remove from stove.
  5. 5
    Reserve 1/3 of the chopped veggies; puree remaining soup (broth and veggies) in a food processor or blender.

    Pour puree back into original pot, along with the reserved chopped veggies.
  7. 7
    Stir and add heavy cream,heating through- DO NOT BOIL.

i added a lg. clove garlic,only one lg. carrot(more and you would have tasted only carrot) used milk instead of cream, add liquid with caution as there is too much liquid, also used 1 medium onion

    Wonderful! Made this last night, followed the recipe exactly except I only had two cans of Chicken Broth, which equalled a little less then four cups of liquid. Everything else was the same. Turned out great, loved the texture, and it didn't need anything else, no bacon, no chives, no sour cream. It was perfect just the way it was. Thanks DancingCook, we loved it!

    When I got this recipe, my fiance repeatedly asked me to make it. Am I glad I did - it is so very good! My kids (even the fussy one) all loved it. Great way to get them to eat their veggies. Thanks for a simple, effective recipe. My only suggestions are to add a little garlic (If you like it), and maybe garnish with a dollop of sour cream. MMM

    Excellent! Very easy and fresh tasting! Will definitely make frequently! I used 1% milk instead of heavy cream.
