Super fast and easy delicious one dish meal that appeals to non-vegetarians, too.

SERVES 4 (change servings and units)

Ingredients

    Peel,dice and boil 5 potatoes for mashing.

    Sauté onion and garlic in 2 T. butter in casserole pan.
  3. 3
    Add: Dijon mustard, dried thyme, Dried Basil, salt and pepper.

    Add: tomatoes, green beans, carrots, and cannellini beans.
  5. 5
    Mix together.
  6. 6
    Drain then mash potatoes with milk and 1 T. butter. Spread mashed potatoes over top of mixture.

    Top with grated cheddar cheese.

    Bake 25 minutes at 350.
