Vegetarian Split Pea Soup

This recipe comes from the Moosewood Cookbook. It's my favourite vegetarian pea soup.

SERVES 6 -8 (change servings and units)

Ingredients

Optional toppings

  • sesame oil (optional)
  • fresh ripe tomato, diced (optional)
  • fresh parsley, minced (optional)

Directions

  1. 1
    Place first 5 ingredients in a large pot.
  2. 2
    Bring to a boil, reduce heat to low, and simmer, partially covered for about 20 minutes, stirring occasionally to prevent split peas from sticking to bottom of pot.
  3. 3
    Add onions, garlic, celery, carrots and potato. (You can saute these first or add them in directly if you want a fat free soup).
  4. 4
    Partially cover and allow to simmer for about 40 minutes, stirring occasionally.(You may need to add extra water).
  5. 5
    Season to taste with pepper and vinegar.
  6. 6
    Serve with a drizzle of sesame oil, diced tomato and minced parsley.

I just thought that this soup was ok. We ate it and it was fine, but I won't make it again.

    I made this for my toddler. I'm not a big fan of split pea soup but he loves it. I freeze in tall glass baby food jars. Used only 2 cups low sodium veggie broth and the rest water. Also used 1 T of balsamic vinegar. Cooked it in the crock pot too. It turned out wonderful! The flavors are delicious and now I love split pea soup!

    This is the best pea soup I've ever made. I used chicken broth rather than vegetable and omitted the potato. Nice and thick and full of flavor!

    We liked this, but the balsamic vinegar was way too strong and overpowered the other flavors. I added additional stock to try and tone it down some which helped. I made this exactly as written and it will make for some good lunches next week. Thanks
