Vegetarian Spinach, Cheese and " Sausage" Casserole

This casserole is a simple, easy to prepare, one-dish, meatless meal. Great for brunches. Be sure to drain the spinach really well. For non veggies, you can easily substitute ground breakfast sausage or crumbled bacon if you prefer.

SERVES 6 (change servings and units)

Directions

    Thoroughly mix all ingredients.

    Pour mixture into a greased 9 inch pie plate (I have also used a square casserole dish as well).

    Bake at 350 for about 40 minutes or until center is set.

    Once out of the oven, I usually let it sit for 5 or 10 minutes.

    To serve, either cut into wedges, or squares, depending on what type of dish you used.

Loved this! Don't do soy sausage, so used regular hot, othewise followed it to a T. What a great base too, if one wanted to add other ingredients...one thought was roasted red peppers for color. Yum - Thanks!

    This was really yummy! I used fat free cottage cheese and added a couple dashes of chili pepper to spice it up. Delicious! Will most definitely make again.

    OMG! OMG! we loved this! This was the best healthy "comfort" food I've tried! I didn't have any vegetarian sausage so I just used normal hamburger-style veggie crumbles. Terrific, I will make this many times!!

    A new favorite in our house and we are new to the vegetarian diet. It was surprisingly easy to make considering the delicious end result. I didn't change a thing, didn't need to.
