Vanilla Sweet Potatoes

I found this recipe in Cooking Light Magazine and it's quickly become a family favorite. Even non-sweet potato lovers like this dish.

SERVES 6 (change servings and units)

Ingredients

Directions

    Pierce potatoes with a fork, and arrange in a circle on paper towels in microwave oven.

    Microwave at high 10 minutes or until tender, rearranging potatoes after 5 minutes.
  3. 3
    Wrap in a towel; let stand 5 minutes.
  4. 4
    Peel and mash potatoes.
  5. 5
    Combine with milk and remaining ingredients.
  6. 6
    Place in a 1-quart casserole; cover and microwave on medium for 7 minutes, or until thoroughly heated.

I halved this recipe and used 1 16oz can of drained sweet potatoes. Also, since I had the oven on anyway, I didn't use the microwave. I baked them at 325F for about 20 minutes. My husband who's not a big fan of sweet potatoes was surprised that he actually liked this! Thanks for such an easy recipe!

    This was soooo good!! I had a bag of frozen sweet potatoes that I didn't know what to do with, and following this recipe, they were superb! It's hard to believe that this is light because it tastes like dessert. Since I already had the oven heated to 325 F for a different dish, I stuck this in there for about 20 minutes instead of microwaving. Thanks for posting!

    This was not loved by my family. We don't like overly sweet recipes and it was good in that respect. Way too much vanilla, I could actually taste the alcohol after baking. It needed salt and maybe some nutmeg?

    These were very tasty but some in my family didn't find them to be sweet enough. And unfortunately those that didn't generally like sweet potatos didn't like these either. On the other hand, the sweet potato lovers in my family that actually like the taste of sweet potato instead of sugary sweet potato,like myself, loved this dish.
