This always reminds me of Christmas. From a Gooseberry Patch Cookbook. Feel free to use Splenda instead of sugar. Serving amounts are a total guess. Update - I have since cut in 1/2 the original amount of vanilla powder that was posted. I do have a hard time finding vanilla powder and so feel free to omit, and just add 1/2 t. of regular vanilla flavoring upon serving.

SERVES 12 (change servings and units)

    Mix all ingredients together and place in cellaphane bags.

    When ready to use, put 2-4 T. in a mug of boiling water and enjoy.

Heaven in a cup! Made as directed and wouldn't change a thing. I know it's called vanilla coffee but what really got me was the cinnamon - the aroma and subtle flavor made this coffee a winner for me. Thanks for sharing your recipe! Made for the Sweet Traditions event, 2009

    Very nice flavor and great cup of coffee to wake up to. I used 6 packets of Nestle's hot chocolate and could not find vanilla powder so substituted french vanilla coffee creamer. Instead of 1 1/2 cups powderd milk I used 1 cup and 1/2 cup of the french vanilla coffee creamer. Still needed a bit more of a vanilla flavor so will make this again and play with the powdered milk and coffee creamer quantities. Thank you CoffeeB for posting this recipe.     Hello. My name is Bellinda and I'm a coffee addict Of course I liked this recipe. I scaled it down to just a few servings. I used home made vanilla sugar instead of the powder and used less sugar. Made for Veg*n swap.

    Coffee B this is really good! I made up the batch minus the vanilla powder as I cannot find that anywhere. What I did use however is powdered vanilla creamer, 1/2 c and only 1 cup of regular creamer. This is wonderful. I like the cinnamon and nutmeg mix and understand how it is a holiday reminder but I plan to have this at the cottage on the weekends as my dessert in the morning.
