Upside-Down Fresh Peach Cobbler

A delicious, fast and easy dish, using fresh or canned fruit. A family favorite , handed down through the generations.

SERVES 8 (change servings and units)

Ingredients

Batter

Directions

    Heat the peaches in saucepan with 1/2 cup sugar, til good and hot.

    (if using canned peaches, don't add sugar).
  3. 3
    Melt butter in 2 qt baking dish.
  4. 4
    Mix dry ingredients for batter.
  5. 5
    Add 3/4 cup milk, beating until all the lumps are gone.
  6. 6
    Pour batter onto melted butter.
  7. 7
    DO NOT STIR!
  8. 8
    Spoon hot peaches onto the batter.
  9. 9
    DO NOT STIR!
  10. 10
    Bake at 350 degrees for 45 minutes, or until top is golden brown.

    The batter will have risen to the top, making a beautiful golden crust.

    serve warm with cream or ice cream.

    This is also good with plums, boysenberries, apricots etc.

This was way too sweet for me. you could easily cut the sugar and the butter in 1/2 and increase the fruit to 3 cups. As the recipe is, I would not make it again. It also needs cinnamon, lemon juice and almond extract.

    Great, quick recipe to use fresh peaches. However, I think it would be better with about half as much butter. Mine turned out kind of greasy.

    This was so simple. I had a whole bunch of fresh peaches that were too ripe and had to use them. I made this for my hubby and he absolutely loved it. I followed the recipe exactly and have to admit that a little vanilla or cinnamon may add to it, but by far a five star recipe.

    This is lip-smackin' and toe tappin' good. I used luscious fresh peaches and my goodness, we were in heaven. This dessert is so easy to make and the taste is divine. I served warm with real whipped creamy. Thanks Joyce
